1 lb thin sliced pork chops
1 tsp vegetable oil
2 slices onion, finely chopped
1 ½ tsp Creole or Cajun seasoning
2 cups Knorr chicken bouillon (constituted)
1 ½ cups 5 minute rice
4 cups fresh broccoli, steamed
½ cup sour cream

Cut pork chops into ¼” strips. Saute in 12” skillet with onion until no longer pink. Sprinkle with Cajun seasoning and continue to cook for another minute. Meanwhile heat 2 c water and add Knorr chicken cube to make 2 c bouillon. Add to skillet with rice, cover and simmer for 5 minutes. Stir. Check rice for doneness. Usually it needs an additional 5 minutes. Sometimes you may need to add additional water if it’s too dry.

Cook broccoli until just tender. Once rice is cooked and bouillon is absorbed, stir in sour cream and broccoli. Blend well and heat through. Serve.
