 3 tbsp butter, divided and some melted

 1 cup milk, warmed for 30 seconds in microwave
 1 cup flour
 1 tsp kosher salt

Preheat the oven to 400° F

Cut 1 T of the cold butter into 8 equal pieces. Place 1 piece in each of 8 muffin tins and place in oven until melted and hot. Melt the remaining butter in microwave. Meanwhile, mix the eggs in the blender until light yellow. Add the warmed milk, and blend. Add the flour, salt and melted butter, and blend until smooth. Spray the 8 muffin tin holes with a little non-stick spray after taking them out of the oven. Pour the batter into the warmed muffin tin and return it to the oven to bake until golden, about 30 minutes. Remove from oven and serve warm.
