1 cup uncooked white rice
4 oz frozen corn
1 bell pepper, diced (optional)
2 stalks celery, diced
¼ cup minced onion
5 oz frozen peas
½ raisins, optional
1 cup sharp cheddar cheese, cubed
2 lemons, juice only
Several tablespoons mayonnaise to moisten
Salt & pepper, to taste
2 cans solid white tuna (4 oz ea.)
Cherry tomatoes, halved
4 hard boiled eggs

Cook rice according to usual directions. Turn into a large bowl and let cool.

Add corn, chopped vegetables, raisins (if using) and cheese cubes, mixing well after each addition.

Add the lemon juice, mayo, salt & pepper, mixing well.

Add the tuna, again mixing well.

Add the cherry tomato halves, folding in gently, saving some for garnish.

Smooth the mixture and decorate with hard boiled eggs and tomatoes.
