Scrub potatoes and cut off blemishes. Leave skins on and dry.
Slice into french fry strips. Put slices into a large bowl.
Drizzle oil over potato pieces and stir until coated. I don't measure, but use the least amount of oil I can. Drizzle a little, stir, drizzle a little more - you don't want them oily so use caution. Sprinkle salt, pepper, garlic powder, cajun spice or whatever spices you want to use and stir until distributed.
Dump into air fryer basket. Air Fry, top rack, at 450°F for 18-20 minutes, flipping the fries twice during that time so they brown evenly. I try to flip them at the 1/2 way point and then again at 3/4 time. If they get done before everything else, I turn off the oven and just leave them in the warm oven until I'm ready to serve.
Note: Cooking time is dependent on the size and wetness of your potato. Some potatoes have more or less moisture inside so may take a bit longer or a bit less time to roast. Mine were fairly wet and 20 minutes was perfect.
