 ½ chopped onion
 2 apples, peeled and sliced
 1 tbsp honey
 1 tbsp dijon mustard
 ½ tsp coriander seed, crushed
 ¼ tsp salt
 2 ½ lbs boneless pork loin roast
 2 tbsp water
 1 tbsp cornstarch

In 4 – 6 qt. crockpot, combine onion and apples. In small bowl, combine honey, mustard, coriander and salt; mix well. Spread on all sides of pork roast. Place pork over onion and applies.

Cover; cook on low setting for 7 – 8 hours.

Remove pork for crockpot; place on serving platter. Cover with foil.

In small saucepan, blend water and cornstarch until smooth. Add apple mixture and juices for crockpot; mix well. Cook over medium heat until mixture boils, stirring occasionally.

Cut pork into slices. Serve pork with sauce.
