1 cup old fashioned oats
1 cup milk
½ cup all-purpose flour
½ cup whole wheat flour
¼ cup brown sugar
3 tsp baking powder
1 tsp cinnamon
½ tsp salt
⅓ cup dried cranberries or raisins (optional)
¼ cup walnuts, chopped
1 well-beaten egg
¼ cup vegetable oil

Combine oats and milk; let stand 15 minutes.

Sift flours, sugar, baking powder, cinnamon and salt into bowl. Add dried cranberries or raisins and nuts.

Combine egg, oil and oatmeal mixture. Add all at once to sifted dry ingredients, stirring just to moisten.

Fill greased muffin pans 3/4 full. Makes 9 muffins. Bake at 375° for 18 minutes.
