4 cups quartered, unpeeled small red potatoes
¾ cup mayonnaise
4 slices bacon, crisply cooked and crumbled
2 hard boiled eggs
¼ cup sliced green onions
¼ tsp pepper
¼ tsp salt

If not using small potatoes, cut into bite size cubes before roasting. Place potatoes on a cookie sheet sprayed with cooking spray. Bake at 425°F for 30 – 35 minutes or until potatoes are tender and golden brown, stirring once.

Mix remaining ingredients in a large bowl. Add potatoes; mix lightly. Serve warm or chilled.
