Yields8 Servings
 2 ½ lbs - 3 1/2 lbs boneless pork shoulder roast
 salt and black pepper
 1 small sweet onion, cut into thin rings
 1 ¾ cups spicy barbeque sauce (18 - 20 oz)
 1 cup Dr. Pepper
 rolls
 coleslaw

Trim fat from meat and cut into large chunks. Place onion in crock pot. Top with meat. Sprinkle with salt and pepper.

In a medium bowl combine bbq sauce and dr. pepper. Pour mixture over meat.

Cover and cook on low for 8 – 10 hours or on high for 4 – 5 hours.

Transfer meat to a cutting board. Using two forks, shred meat. Place meat in a large bowl. With a slotted spoon remove the onion of the cooking liquid and add to the meat. Skim fat from the cooking liquid. Stir enough of the remaining cooking liquid into the meat mixture to moisten.

Serve on rolls or buns with coleslaw.

I usually use a pork loin roast and Sweet Baby Ray's Spicy & Sweet BBQ sauce.

If you want more bbq sauce flavor you can omit the Dr. Pepper and add a tablespoon or 2 of brown sugar. This will give you a much thicker sauce.
