Cook rice in a rice cooker or on the stove in a saucepan with a tight-fitting lid, simmered for 20 - 25 minutes. Let rice sit, covered, for 10 - 15 minutes once cooked. Meanwhile make the dressing.
Stir vinegar, sugar and salt until dissolved.
Put the hot cooked rice into a non-metal mixing bowl and spoon the dressing over the top one tablespoon at a time. Gently mix it in with a wooden or plastic spoon. Taste as you go.
Cool to room temperature. Do not place in refrigerator. Cover with a damp, clean dishcloth to reduce it drying out.
