Pierce potatoes with a fork and microwave for 12 - 15 minutes in microwave.
While potatoes are in microwave, preheat oven to 400°F.
Bake potatoes in oven for 15 minutes. Cool slightly.
Cut off top 1/3 of potato and scoop out insides, leaving about ¼” of the potato inside the skin.
In a bowl combine the insides of the potatoes, butter, sour cream, ¾ c of cheese, half & half, milk, salt and pepper. Mash until smooth. Stir in bacon, if using.
Fill each potato skin with mixture and top with remaining cheese. Bake at 350°F for 15 minutes or until cheese has melted.
