Cut mushrooms in half, or in quarters if large. In a large bowl, combine oil, garlic powder, soy sauce, salt and pepper. Add mushrooms to bowl and toss to coat.
Preheat air fryer, if necessary, to 375°F. Coat air fryer basket with nonstick spray. Add mushroom mixture. Air-fry for 8 minutes. Remove basket and sprinkle mushrooms with 1 tsp Thyme; shake basket to toss mushrooms. Air-fry for 7 minutes or until mushrooms are lightly browned and tender. Sprinkle with remaining Thyme.
