Dressing
 ¼ cup vegetable oil
 3 tbsp rice vinegar
 2 tbsp sugar
 1 tbsp sesame oil
 2 tsp soy sauce
 1 ½ tsp dry mustard
 ½ tsp grated fresh ginger
Salad
 3 chicken breasts, cooked & shredded (about 2 lbs)
 1 head chinese cabbage, shredded
 16 ½ oz roasted unsalted peanuts
 5 medium green onions, thinly sliced
 3 oz rice stick noodles, cooked according to directions (optional)
Dressing

Combine all ingredients in jar and shake well.

Salad

Mix chicken, cabbage, peanuts and green onions in a large bowl. Pour dressing over and toss gently.

Add noodles and toss again. Serve chilled.
